Chia pudding

Easy chia pudding recipe with almond milk and vanilla. 
My favorite chia seed pudding recipe with just simple ingredients for a creamy texture – perfect for desserts, breakfasts, or a make ahead snack.

I get surprised every evening how easy chia pudding is to make. In the beginning I felt the chia texture a little too gooey, but after making it with almond milk and vanilla, this is now one of my favorite breakfast recipes.

Make the recipe in the evening in 5 minutes and then you have the breakfast ready next morning. Last time I made it, I topped with this chocolate granola recipe and fig compote. Really worth trying out too.

Chia pudding

Serves: 1 glass
Prep Time: 5 min. Cooking Time: 1 hour.

Ingredients

  • 1 cup plant milk (I always use almond milk for overnight chia)
  • 3 tablespoon chia seeds
  • 1 teaspoon good strong vanilla (or vanilla seeds)

Instructions

Mix chia seeds, vanilla and almond milk all together in a glass or bowl with a spoon and set aside 30 minutes on the kitchen table. (remember this recipe = 1 glass)

Mix again before putting in the fridge to soak overnight.

Next day mix around with a spoon again, and serve in a bowl or jar topped with berries, compote, yogurt og some crunchy like granola.
