Creamy Pasta Penne with pesto and lemon:
This creamy pasta is my new favourite quick supper. It’s filled with flavour thanks to the sautéed onion and garlic, and the mix of tomatoes and basil, plus a squeeze of lemon juice.
Just love stirring a few vegetabels into pasta dishes. It’s an easy way to get more veg in and the pop of red and greens looks so delicious too. It’s also a week savor on busy days and you only got 10 minute for a tasty dinner.
For this recipe I also made this delicious spinach pesto recipe to the dish drizzled on top of the pasta. It turned out so good and creamy so it’s worth giving that a try. Comment below if you have any questions making it.
Creamy Pasta Penne – In 10 minutes
Creamy Pasta – my new favourite quick supper. Simple pasta recipe with a squeeze of lemon juice. Healthy and made in only 10 minutes.
- 1,5 cup pasta penne (1,5 cup for 1 person)
- 1 stem of spring onion
- 1 clove of garlic
- 1 handful of cherry tomatoes
- juice from half lemon
- 1/2 teaspoon turmeric
- 3 tablespoon soy cream
- half cup of water
- salt and pepper
- Olive oil
- Decorate with fresh basil
Start by putting your pasta in a pan full of boiling water, cook for 8-10 minutes.
While the pasta is cooking, place your onions and garlic in a large pan and drizzle with olive oil. Pan fry for 5 minutes until golden, adding in the cherry tomatoes, spring onions, lemon, a little turmeric and soy cream, frying for 5 more minutes. Taste with salt and pepper.
Once everything is cooked, drain your pasta and stir through your tomato and lemon cream. Taste with extra lemon, salt and pepper and serve with fresh basil on top.
