Vegan Pea Patties

Green and Healthy Vegan Pea Patties! Full of protein and you can add all vegetables you want. Served with a cold potato salad. You’ve asked for this recipe in such a long time, so here it is! A special pea patty version compared to traditional vegan patties.

Simply just mix all ingredients together, form like round patties and cook on a pan until golden and crispy! Extra good news is that if you’re looking to prep your dinner ahead of time.. These patties can be made and kept in the fridge for a day or two and then cooked up just before serving. An added bonus!

Furthermore, another good thing about these patties: There are SO many opportunities with the ingredients list. You can easily hide a lot of veggies in them. I guess not even kids or adults would ever notice it.. I always have peas in the freezer so it was easy for me to add in recipe. But parsley, celery, spinach, broccoli, kale or cabbage would work perfectly too.
Not complicated at all to add more vegetables in you daily meals, right?

Vegan Patties with Peas

Serves: 10 x Patties
Prep Time: 20 min. Cooking Time: 10 min.

Easy Vegan Pea Patties with cold potato salad for an easy dinner. This patty recipe with chickpeas and green peas are ready in only 30 min.

Ingredients

  • 2 tablespoon of Flaxseeds
  • 7 tablespoon Water
  • 250g. Chickpeas, cooked
  • 1 small Onion, chopped
  • 1 clove of Garlic, chopped
  • 150g. Peas (thawed peas)
  • 1 teaspoon Paprika
  • Juice from ½ Lemon
  • 3 tablespoon Flour
  • 1 teaspoon Baking Powder
  • Handful Parsley (optional)

Instructions

In a small bowl start to mix the flax seeds with water. Leave to thicken while preparing the rest.

Cook the chickpeas or use precooked ones. Chop onions and garlic. Thaw the peas in cold water.

In a high powered mixer or food processor add: Chickpeas, onions, garlic, peas, paprika, lemon, flour, baking powder, parsley – and a generously pinch of salt and pepper. Mix until you have a good well-mixed texture.

Afterwards, add the flax seed mix too and carefully mix the ingredients with a spoon. (The mixture will be a little wet and sticky.) Form like round patties with your hands.

Heat a pan with 3-4 tablespoons of oil. Fry them shortly until golden on both sides. Flip them halfway through. The result should be crispy, yet soft inside.

Serve the patties in burgers or with cold salad and dressing.

↓ As you can see on the pictures I made a simple, delicious easy potato salad on the side filled with green spring onions, avocado – and peas of course. And as you can imagine it was the perfect combination along with the crispy warm green chickpea patties..

These crispy and salty chickpea patties was actually meant to be falafels. But turned out like patties instead. Same crispiness and the flavors are unbeatable.

Make your vegan patties in variations and colors: 

These turned out yellow-ish from the chickpeas and with a green color from the peas. But you can easily experiment more with the patty veggies and colors, and it’s actually quite easy and fun! There are no limits or rules. As I said in the beginning you can add so many vegetables in the patty mix. Shredded vegetables like cabbage, spinach or kale are healthy and filled with so many health benefits. Adding greens in recipes like this are the easiest way to get more veggies in you weekly vegan meals. Plus you get the most beautiful colors.

You can also try to experiment with spices.. Do you want your patties to be green, yellow, orange, red or purple?? Natural spices and veggies like beetroot, carrots, bell peppers, paprika or turmeric really bring out colors! It’s quite fun to work with. Even kids would love the result.

These vegan pea patties are pretty simple to make. And remember you can make these in big batches, freeze down and save for busy weeks!
