Dinner with spicy vegan dahl with kidney beans and lentils:
Living at the freeezing cold country side in Denmark the lasts weekends, I just needed to make this! As the weather has been so rainy recently we’ve been making lots of warming dishes and this lentil dahl has been my favourite.. Get the recipe underneath:
DAHL RECIPE:
(You can leave this lentil dahl uncovered for 2-3 hours, but if you want a quick dinner, simmer over a low temperature for about 30 minutes)
Mix the following:
• One can of kidney beans in chili source (or just normal kidney beans)
• 1 can of dry green lentils (or white beans)
• 1 can of tomato paste
• shallots (1 small)
• 1 teaspoon chili pasta (or chili flakes)
• 1 clove of garlic
• 1 teaspoon cumin
• 1 teaspoon paprika
• taste with salt and pepper
For serving:
• Rice (I normally use brown rice, but the white rice also taste very delicious)
• Rucola salad
• Fresh parsley (or basil)
• natural (coconut) yoghurt
~ Start by putting all of your dahl ingredients into a pan to stir. Boil you ingredients a bit before reducing to simmer over a low temperature, then leave uncovered for 2-3 hours until thick. Add more water if needed. This recipe is without coconut milk, but cooking the lentils in coconut milk makes each bite much creamier together with the beans, plum tomatoes, cumin, paprika, garlic and pepper which add such a lovely blend of flavors!
When your dahl is almost cooked and smells delicious, put your rice on to boil and slice your avocado. Serve with a side of rice, maybe some coconut yogurt, some sliced avocado, chopped parsley or salad, and a sprinkle of chilli flakes – enjoy!
~ I love this served with rice, maybe some natural (coconut) yoghurt, rucola, avocado slices and sprinkled with chopped parsley and chili flakes!
