Perfect and easy summer salad with strawberries for warm days! This recipe is made with fresh strawberries, edamame beans and avocado. Drizzled with balsamic vinegar, lemon, chives, salt and pepper. It doesn’t get more ‘summer’, right?
Often I eat my salads with mains or bigger meals. But you can easily make this recipe as a lunch snack itself. Put in the fridge maximum 1-2 days and spice it up with some fresh green pesto. I often make this easy homemade spinach pesto (actually I think I make this pesto recipe every week).

Summer salad with strawberries
Recipe salad with strawberries. Made with seasonal strawberries, edamame beans, avocado and fresh chives. Full of vegetables and great taste.
- 250g edamame beans
- 250-300g fresh seasonal strawberries
- 1/2 avocado
- 1 teaspoon balsamic vinegar
- 2 teaspoon maple syrup
- juice from 1/2 lemon
- salt and pepper
- decorate with fresh chives
Wash and cut the strawberries in small pieces. Cut the avocado in small pieces too.
Mix the dressing in a bowl: balsamic vinegar, maple syrup, lemon juice, salt and pepper.
Decorate the fresh edamame beans with strawberries and mix in a bowl. Add the dressing and mix together. Decorate with fresh chives on top of the salad.
