I’m not afraid to admit that this avocado cream is my favorite ever. I’ve made it so many times and I eat it with almost everything. The avocado dip is so easy to mix together and you can easily omit or replace some of the ingredients.
The garlic and spinach leaves gives it an edge and makes it just divine. The dip is perfect for vegetabels, pommes frites or warm stews.

I just love spinach (or parsley) in this recipe because of the rough but still creamy texture. You can easily omit the leaves and get a consistency like a creamy mayonnaise. For storage: Keep to a sealed clean glass container in the fridge for about 2-3 days. Go find the recipe underneath.

Creamy avocado dip

Serves: 2-3 persons

Ingredients

  • 2 ripe avocados
  • Half cup of olive oil
  • 1 big clove of garlic, pressed
  • Around 10 fresh spinach leaves, or 1 small handful of parsley
  • 1/2 juice from 1 lemon
  • Taste with salt and pepper

Instructions

Slice the avocado add with oil, garlic, spinach leaves and lemon juice to the foodprocessor (mine is a very small one as you can see underneath, so I'm always making it in two portions).

Mix until smooth and creamy - and taste with salt and pepper. Add more garlic if you want more taste.

~ Simply scoop the avocados out of their skin and place all the ingredients into a food processor. ~ I made it in 2 portions. Here one avocado mixed with a couple of spinach leaves, garlic, lemon, salt, pepper and half cup of olive oil.
